• Fish should have a pleasant, subtle, fresh sea smell - if it's fishy and strong in any way, it's less fresh.
• Fish with scales should have an even covering with no bald patches.
• The fish eyes should be bright and plump, not sunken or dull.
• Fish gills should be bright red, indicating that oxygen is still in the blood.
• Whole fish should never look dry - it should be plump, firm, moist and shiny.
