Strawberries marinated in Balsamic Syrup w/Fresh Basil and Freshly Ground Black Peppercorns with Vanilla Ice Cream

Ingredients

Serves 4

This recipe is better if made either the day before or at least a few hours before serving

  • 500g Strawberries
  • 200 g Castor Sugar
  • 40cl Water
  • 15cl Balsamic Vinegar
  • 50 g of Chopped Basil
  • Freshly Ground Pepper
  • Mascarpone or Vanilla Ice Cream


Instructions

Mix water and sugar in a saucepan. Bring to a boil over gentle heat and turn off heat.
Add balsamic vinegar and set aside to cool completely. Add to a mixing bowl.
Wash and clean strawberries, and add to syrup. Add the chopped basil, cover with clingfilm and refrigerate either overnight or for a few hours.
Once you are ready to serve, disperse among four serving bowls, grind freshly ground black pepper over the top and serve with either a dollop of mascarpone or vanilla ice cream.
