Lemon and Thyme Cod

Ingredients

Serves 4

  • 2 large lemons
  • 2 tablespoons flour
  • 2 teaspoons chopped fresh thyme
  • 1.5lbs/ 600g cod fillet, cut into 4 pieces
  • 2oz/ 50g butter


Instructions

Grate zest from 1 lemon; cut remaining lemon into wedges.

In a bowl combine flour, thyme, grated lemon peel, 1/2 teaspoon salt, and 1/4 teaspoon coarsely ground black pepper. Dip each piece of cod in flour mixture to coat.

In a large non-stick frying pan, heat butter over medium-high heat. Add cod and cook 7-10 minutes, turning once, until fish flakes easily when tested with a fork. Serve cod with lemon wedges.
