Sabai Massaman Curry

Ingredients

  • 500g chicken legs or thighs
  • 1tbsp of massaman curry paste (Thai gold)
  • 1 tin coconut milk (Thai gold)
  • 200mls veg or chicken stock
  • 2 medium potatoes (cut into large dice)
  • 1 teaspoon fish sauce (Thai Gold)
  • handful of roasted unsalted cashew nuts or peanuts

Instructions

Brown the chicken in a little oil, add the curry paste and cook for a few minutes. Add the coconut milk, stock, potatoes and fish sauce, simmer until the chicken is cooked through (approx 30 mins) .Just before serving add the cashew nuts. Accompany with rice.
