Dario is synonymous with great food, often using new and exciting ingredients in simple, easy dishes at his restaurant La Palma on the Mall, in Waterford. He followed his father into the culinary world, but has been cooking all his life taking influence from his whole family, and his strong Italian roots. After spending time working in restaurants in Dublin, USA and Europe, Dario decided to return home and concentrate on the family business and bring with him his love of Italian food. Since then, the La Palma brand has gone from strength to strength, with the opening of Espresso on Parnell St, and more recently Azzurro at the Ship in Dunmore East in June 2007. Dario is passionate about using the best of local produce, and combining them with high quality Italian food, maintaining relationships with local suppliers as much as possible.
Dario bases his recipes on simple ideas, and simple food that people know, eat and love. With a little flair and imagination, anything can be made to taste great. This approach appeals to the way that most people cook and does contribute to his success at La Palma.
La Palma on the Mall is Waterfords original and finest Italian restaurant. Set up in 1988, they have evolved over the past 20 years, striving to bring their customers the quality and freshness you expect from their restaurant.
