With a deep history in good food, Seamus Sheridan has been owner chef of award winning restaurants in both Ireland & Scotland & since forming Sheridans Cheesemongers with his brother, has opened Sheridans winebar in 2004, Sheridans on the Dock bar in 2006 & a restaurant on the same premises in 2008, all in Galway. He is, among a long & prestigious list, a founding member of Slowfood Ireland, consultant for Board Bia & has lectured at UCC in their Artisan Food Diploma.

Working closely with producers to get the very best
Sheridans Cheesemongers was established in Galway in 1995 by brothers Seamus and Kevin Sheridan, when they started selling Irish farmhouse cheeses from their stall at the Galway Saturday market. They soon opened their first shop in Galway. In 1997 a third partner, Fiona Corbett, from Butlerstown, Waterford, joined the brothers. In the same year Sheridans Cheesemongers were involved in the set up of the now well-established Temple Bar Food Market in Dublin and a second shop on South Anne St in Dublin city centre followed. Since then, another shop in Dublin has opened, and Sheridans now also operate market stalls in nine locations, including the original Galway market. The premises in Galway also houses a kitchen for the production of Sheridans own terrines, pestos and other homemade delicacies.
